Because these contests don't work on trust! We've been eaten and deliberately set up to lose before-- why would this one be any different?!

Because in this one, there's an obvious way to get out of it with only minor injuries! And unless they know who we are, they have no reason to think that we were honest when we told them we're going to trust them! I'm pretty well known and well liked—I'm willing to bet my life on it.

Staking your safety on your reputation in a gallery full of people who would murder at the drop of a hat to protect themselves is a terrible idea.
